cholesterol is not what you have to watch out for, its the trans fats.

stay away from all partially hydrogenated and hydrogenated oils.
References :
I looked high and low without much success. I love Chinese food and my son and I eat it every 2 weeks or so. The 2 links below seem to give general information regarding saturated fat content. If you watch the saturated fat content that usually goes hand in hand with cholesterol content. Here in Florida for instance most fried rice is not made with eggs. I have had elevated cholesterol levels since they started testing back in 1977. Then my total cholesterol (at age 19) was 421. Basically stay away from anything deep fried and you can have some meat/chicken dishes but leave the egg rolls alone. Between the 2 links below you should get some idea of what you can, and cannot eat. As with anything the key is "moderation". By the way, I have never gone on any medications for my cholesterol as I have been able to keep it under control. Good luck and good eating. Boy... some Moo Goo Gai Pan, beef with broccoli, and some fried rice sounds god for tonight.
References :
http://chinesefood.about.com/library/bltakeoutcalories.htm
